An easy to do cajun style dinner-this comes from my private recipe collection at allrecipes.com
Rinse fish, pat dry. cut each fillet in half crosswise. heat 12-inch heavy nonstick skillet over medium-high heat. Add fish,cook 4 minutes, turn. Cook 2 to 4 more minutes or until fish flakes when tested with fork.
Meanwhile, in large microwave-safe bowl, combine rice, beans, and remaining 1 tsp seasoning. Cover and microwave on high (100% power) for 3-3 1/2 minutes until thoroughly heated.
Finely shred 2 tsp peel from one lemon; cut other lemon into wedges.
Serve fish with rice and beans. Pour melted butter over top; sprinkle with lemon peel and parsley. Use the lemon wedges for more taste over your fish or rice. Enjoy :)
